Slap Ya MaMa ~ It's Smothered Okra & Tomatoes

No need to visit the farmers market when
 you have neighbors that drop off their
extra garden veggies right to your door.


 A big bag of garden fresh picked okra. 
 I wanted to share with you just one way we cook it in the South. 

[First I picked out all the tiny ones  ~ 
 I like to boil these in salted water and eat them dipped in vinegar. ]

Smothered Okra & Tomatoes 


To make Smothered Okra & Tomatoes
Wash and cut your okra


Chop up one yellow onion



Place in pot with enough water to keep it from sticking.


Add one can of Rotel and a can of diced tomatoes



Add more water if needed... I usually add water up to half of the okra...the water will cook out.  Stir occasionally because it will stick to the bottom of the pot, add water as needed.



Can you tell we love garlic at this house? 
If we do not have fresh on hand we use this.
I add about 2 tablespoons


Slap Your MaMa... southern sayin that means its sooo good you would risk slappin your momma for it.

Well we love this seasoning ... it has less salt than some of the other local brands.
I add a shake or two of this ...
my Smothered Okra & Tomatoes are gonna be so good my family might wanta "Slap Me".

As it cooks down it will turn a darker green. 
 This takes about three hours on low to simmer.


You can eat Smothered Okra & Tomatoes over rice or it can be frozen to add into a shrimp gumbo when the weather gets cooler.

YUM!

  1. I had to laugh when I saw this post...my youngest son is crazy for SYL! He's requested a case to take off to school. Lol I don't know what was going on, but when I went to buy it the shelf was empty. I couldn't believe it! It's great stuff. Hoping for a restock today. : )

  2. Yum! I love okra and would love to try this recipe along with some "Slap Ya Mama" seasoning! I'll have to check again to be sure but I don't think they sell this in our local grocery store. XOXO

  5. Hi Melissa! :) Thanks for leaving that sweet comment about my DIY's...those are my favorite things to do! I swear if a day goes by where I don't get to be creative in some sort of fasion, I can't stand it.(and I get a little grumpy! lol)
    Your tomatoes and okra look yummy...I've never tried okra like that. We tend to bread and deep fry it around here. :) (yours looks healthier) lol

  7. Hmmm..being from the west coast, I have never had okra. But I love that spice name! Sounds like it would make anything taste good from the south all the way to the west coast.

  8. Okra and tomatoes is one of my favorite dishes, I have made a lot of it this summer, since my creole tomatoes and cajun okra have done so well. I am going to try your recipe. I make mine differently,but always like to try something new, and I just bought a can of Slap Your Mamma while I was in Louisiana.I am now following.

  9. Thanks for this recipe, I've been looking for different ways to make okra since my dad telling me okra was a pick-everyday veggie. I tried growing it once, and it actually grew for me (that's saying something haha), but as a newb gardener, I didn't know I was supposed to pick them daily and they got too big and tough.

    Daddy loved fried okra so much that Grandma showed our Yankee mom how to fry them for Daddy, but I hated them that way LOL. Now that I'm much older, I'll try them fried once more in the hopes my adult taste buds have changed, but I'll be adding more seasonings than just salt and pepper (Yankee mom again, heck we thought the occasional sauteed onion with dinner was gourmet eatin haha).

    But I know I'll like okra this way and will bookmark for next spring! I'll probably be able to find Slap Ya Mama seasoning pretty easy here in Houston ^_^
